Memphian Salad
Dressing

my family always used the vinagrette salad dressing
reproduced at this site, my maternal grandmother preferred this one.
Perhaps it was the relative novelty of it, but while the sour and
pungent dressing we normally used is something of a comfort food to
me, this recipe always struck me as being somehow more "restaurant"
than that one. In any case, this is a good -- and healthy -- dressing.
- 1 pinch of tarragon
- 1 pinch of thyme
- 1 pinch of basil
leaves
- 2 tablespoons of
vinegar
- 1/2 teaspoon of
salt
- 1/3 cup of olive
oil
- 1 tablespoon of
dijon mustard
- 1/2 teaspoon of
ground pepper
- 1 clove of garlic,
crushed
Soak tarragon, thyme
and basil in vinegar for one hour.
Dissolve salt into
the seasoned vinegar.
Add olive oil, dijon
mustard, pepper, garlic.
Shake well.
