Amazonian
Macaroni and Cheese
is truly the "cheesiest." There's no reason for you to ever make
macaroni and cheese from a packet, considering how easy this is. My
wife's clear favorite.
California
Casserole
was my favorite recipe growing up. I've added more peppers and cheese
to it, making it a major cholesterol bomb. But it's yummy. It's not
Thanksgiving to me without this rice, cheese and peppers recipe.
Caribbean
Black Beans
is a light, somewhat exotic vegetarian dish. I want to boost the orange
flavor, personally.
Caribbean
Jerk Chicken
is a cheap and tasty marinade, moderately spicy.
Chili
Beauchamp
is my award-winning chili recipe. It's beefy, thick, heavy on the
beans and easy to control how spicy you make it. (I like it hot.)
At some point I'll make a vegetarian version, but I've not even begun
that process yet.
Enchilada
Bake
is a vegetarian Mexican-esque lasagna, made with tortillas and veggies.
Yummy.
Green
Spaghetti
sounds odd, but's it's good. It's actually a creamy greenish sauce,
made with basil, parsley and garlic.
Joelfredo
is my brother's quickie shortcut fetuccini alfredo. Very good, and
sinfully easy.
Joe's
Special
was my brother's favorite dish growing up: ground beef, spinach, mushrooms
and egg, all scrambled together in a skillet.
Margarita
Chicken
is a sinfully easy recipe (although Chili's will charge you $19 for
it), and I'm still tinkering with it. I'm gonna try it as the meat
in a fajita next.
Memphian
Salad Dressing was
my Grandmother Ekmark's favorite dressing. As my Grandfather Ekmark
was wont to say, it'll put hair on your chest. Of course, he said
that about everything.
Oriental
Noodles with Spicy Peanut Sauce
is a yummy no-meat dish. Easy to make and inexpensive. Gotta like
that, right?
Peanut
Spaghetti
sauce is another vegetarian dish. Good, unusual and easy to make.
Shrimp
Creole
is a good, easy dish. It's something of a "comfort food" for me. It's
especially good with a good amount of hot sauce and served with iced
tea.
Vinagrette
Salad Dressing
is the dressing I grew up with and still love.
