Joe's Special
efore
you ask, I have no idea who "Joe" is. This is a recipe I grew up with,
meaning I never had the childhood dread of spinach that seems so prevalent.
Whereas California
Casserole
is my favorite recipe, this is my brother's favorite. It's not as
healthy as some of the recipes on these pages, but how bad can it
be? It does have spinach, after all. Popeye would never lie to us
...
- 1 pound of ground
beef
- 1 small can of
sliced mushrooms
- Salt and pepper
to taste
- 1 package of frozen
spinach
- 1 egg
This recipe is so
easy, it's almost embarrassing.
Brown the beef, drain
the fat (I mean, really! Yuck!). Add spinach, and pour off the water
once it's thawed. Add mushrooms and saute. Add egg and scramble into
the rest.
Could one use fresh
spinach and mushrooms? Probably. But I'm a lazy, lazy boy and haven't
messed with the old recipe. Why don't you try it and get
back to me?
