Cheese Muffins
et
another dish swiped from the bosom of the Potomac News (yikes).
My editor always made this dish for potlucks, going-away parties and
such. I eat these puppies by the handful.
- 3/4 cup of
butter
- 2 cups of
shredded sharp (or extra sharp) cheddar cheese
- 2 cups of
self-rising flour
- 1 8 oz. carton
of sour cream
- 2 tablespoons
of frozen or dried chopped chives
Melt butter
in medium saucepan over medium heat. Add cheddar, and cook two minutes,
stirring constantly. Stir in flour, sour cream and chives.
Spoon batter
into ungreased miniature muffin pans, filling 2/3 full.
Bake at 375
degrees for 20 to 22 minutes. Remove immediately.
Makes four dozen
yummy little muffins.
